Rather, it&#8217;s suggested to let refrigerated meat sit out from the fridge for awhile before cooking it. Just a short time, such as ten or fifteen minutes&#8217; rest from the fridge, before cooking, can help. (For safety reasons, one should never let it sit out more than two hours.)<\/p>\n<p>\nThe proposed reason why meat should be allowed a rest from refrigeration, before cooking, is that its temperature rises more gently that way. The result is that the center cooks more easily.
