In summer, the stately Holstein cows (black and white) wandered leisurely on broad, green pastures, easily visible from the road as one drove by. Dairy farming, someone mentioned to me, meant prosperity.<\/p>\n<p>\nOut of curiosity, I looked up Nova Scotia&#8217;s agricultural output, wondering if dairying would be in the lead.
