Baking: does yeast need sugar?
Self-tutoring about baking: the tutor mentions a lesson he learned.
I went to make French bread the other day and discovered a recipe that calls for yeast and flour, but not sugar. (I’d been led to believe that yeast needs sugar to feed on.)
Apparently, sugar needn’t be provided as such: I made the recipe and it worked fine. It turns out that yeast can break down flour into sugar, then feed on that.
