Self-tutoring about baking: the tutor reflects about using cake mixes.

Most cakes I make at home are from a mix in a box. I rotate among Duncan Hines, no name, and Betty Crocker. They always turn out perfectly, and bake in the time the box says.

My reason for making box cakes is that, usually, what people really want is a fresh cake, made from scratch or not. Sometimes I do make cakes from scratch, and I often make bread from scratch as well. However, it’s not usually necessary to make a cake from scratch.

Just one tip: before deciding to use a cake mix, make sure you have the eggs, etc, that you will have to add. It’s easy to open a mix that needs three eggs, then realize you have only two.
