Cooking: GI of couscous

Self-tutoring about cooking: the tutor mentions the GI of couscous.

I mention GI back in my post on June 16, 2017. Since then I’ve mentioned it in numerous other posts which you can find from the search box.

To refresh, GI means glycemic index, which measures how quickly a food, after consumed, enters the bloodstream as glucose. It’s a relative scale: white bread has a GI of 100, while vegetable oil has a GI of 0. Oil isn’t a carbohydrate, so consuming it doesn’t cause an increase of glucose in the blood. GI of 0 to 55 is low, 56 to 69 medium, and 70 to 100, high.

Couscous has a GI of around 65.
